GOAN GOURMET:
Tendli Pickle by Sushila Pereira

100 tendlis
3 tsps salt
1/2 bottle vinegar
1/2 bottle oil
1 tbsps sugar

Grind in 1/4 bottle vinegar:
 
100 red chillies
10 tsps turmeric powder
35 flakes garlic
1 inch piece ginger
1/2 tsp fenugreek

Wash & wipe the tendlis. Cut lengthwise into slices. Apply salt and set aside for 1 hour. Heat oil and fry the ground masala. Add remaining vinegar and stir well. When it starts boiling, stir in the sugar. Then add the tendlis and cook till tender crisp. Cool and bottle.
